From byproduct to superfood: Technical University of Moldova validates high-protein hemp bread in peer-reviewed study
Researchers at the Technical University of Moldova (TUM) have successfully developed an innovative bread fortified with hemp seed meal. The study, published in a prestigious international food science journal, highlights the nutritional potential of industrial cannabis.

The breakthrough follows the Moldovan government's May 2023 decision to authorize industrial hemp cultivation. By utilizing the nutrient-dense meal left after oil extraction, scientists are transforming industrial byproducts into high-value functional foods.
Academic validation and nutritional impact
A team of six researchers from the Faculty of Food Safety conducted the study. Their findings confirm that hemp-fortified bread offers superior digestibility and significantly higher protein and mineral content compared to traditional wheat-based products.
"Our goal is to disseminate information on the benefits of these byproducts within a circular bioeconomy," stated Tatiana Capcanari, Associate Professor at TUM. The project was supported by €25,510 (approx. 500,000 MDL) state-funded research grant.

Artisanal process meets modern science
The production process involves a slow, 12-hour fermentation at 4°C. Doctoral student Cătălina Negoiță, who also manages a bakery, noted that the result is an innovative product that enhances both the flavor and aroma of traditional bread using natural sourdough.
Aurica Chersanova, Head of the Department of Food and Nutrition, emphasized that the research provides the scientific grounding necessary to recontextualize hemp as a vital nutritional resource rather than a controversial plant.

Economic outlook and scaling
The initiative aligns with emerging agricultural trends in the region. Ion Rață, President of the Association of Hemp Growers, Breeders, and Processors, announced plans to sow 180 hectares in the Cahul district this year.
The association aims to establish specialized bakery systems across regional centers. This strategy seeks to integrate hemp-based products into the daily diet of Moldovan citizens while creating a sustainable value chain for local farmers.
